Easter Recipe: three unusual ideas

Recipe for Easter with candied fruits
Ingredients:
- flour - 5.5 cups,
- yeast - 50 g,
- milk - 1.5 cups,
- egg yolks - 10 pcs.,
- proteins - 3 pcs.,
- sugar - 1 cup,
- butter - 250 g,
- raisins-half a cup,
- cognac - 2 tablespoons,
- candied fruits - 2 tablespoons,
- lemon zest - 3 teaspoons,
- nutmeg - 1 teaspoon,
- vanilla sugar-3-4 teaspoons,
- salt - to taste.
How to cook pasca-step-by-step recipe:
- To prepare the paschi, brew half a cup of flour in the same amount of boiling milk and stir until an elastic mass is formed.
- Yeast is diluted in half a cup of warm milk, mix with half a cup of flour and put in a warm place for 10 minutes.
- Mix the brewed flour with the yeast. Cover the dough for paski with a towel, put it in a warm place and wait until it comes up.
- Egg yolks, sugar and salt are ground into a homogeneous mass of white. Pour half of this mass into the yeast mixture, add a quarter cup of flour, knead and let it come up for an hour.
- Add the second portion of egg yolk with sugar and all the remaining flour. Knead the dough for the paschi until it does not fall behind your hands.
- In the finished dough, pour the melted and cooled butter, knead, add spices and cognac. Let the dough come up again.
- Mix the dough for paski and add the raisins and candied fruits to it, rolling them in flour.
- Put the pasty dough in the molds. Sprinkle raisins and candied fruits on top. Let the pasty dough come up again in the molds.
- Brush the paschi on top with the egg yolk and place in the oven for 45 minutes. Check the readiness of the pasca with a wooden stick.
- Make the glaze for the pasty: grind the whites with sugar. Spread the icing on the finished pasties.
Almond paste recipe
Ingredients:
- flour - 1 kg,
- milk - 2 cups,
- yeast - 50-70 g,
- eggs - 5 pcs.,
- sugar - 1 cup,
- butter - 300 g,
- almonds-200 g,
- lemon - 1 pc.,
- pitted raisins - 1 cup,
- salt - to taste.
Recipe for almond paste in the oven:
- This Easter recipe is quite simple. Boil the milk and cool it to the temperature of fresh milk.
- In a small part of the milk, dilute the yeast, adding 1 tablespoon of sugar. Let the yeast rise.
- Prepare the dough for paski: add flour, yeast to the milk and mix thoroughly.
- Cover the pasty dough with a towel and put it in a warm place so that it fits.
- Whisk 5 egg yolks with sugar, melt the butter and cool.
- Add the egg yolks and butter to the paschi dough. Rub the zest of one lemon and add to the dough.
- Add the almond kernels to the paschi dough along with the raisins and salt. Whisk in a persistent foam of 5 proteins and carefully knead the dough.
- Spread the dough for paski in molds, richly greased with oil and sprinkled with flour. Let the Easter eggs come up, smear their surface with egg yolk and sprinkle with almond kernels.
- Bake our paschi in the oven at 180 degrees. Check readiness with a wooden stick.
Chocolate pasca recipe
Ingredients:
- flour - 1.5 kg,
- yeast - 50 g,
- egg - 8 pcs.,
- sugar - 2 cups,
- grated almonds-2.5 cups,
- chocolate - 100 g,
- rum - 30 ml,
- red wine - half a glass,
- breadcrumbs - half a cup,
- candied orange-half a cup,
- juice of 1 lemon,
- cinnamon - 1 teaspoon,
- crushed cloves - 1 teaspoon.
for the chocolate glaze:
- cocoa - 2 tablespoons,
- eggs - 3 pcs.,
- sugar - half a cup.
Paschi Recipe – step-by-step recipe:
- Dissolve the yeast in warm water and add the flour. Cover the sourdough with a towel and put it in a warm place so that it rises.
- Carefully mix the dough for paski, add the yolks, ground with sugar, almonds, chocolate, wine, rum, candied orange, cinnamon and cloves to the resulting mass.
- Whisk the whites thoroughly into a persistent foam. Add them to the pasty dough.
- The pasty mold was lined with oiled paper.
- Put the dough there and put the Easter in the heated oven. Bake at 150 degrees for 60-90 minutes.
- Cool the finished Easter and carefully remove it from the mold.
- Prepare the glaze for the pasca: heat the sugar over a low heat, carefully add the eggs and cocoa.
- Mix thoroughly until smooth.
- Cool the glaze and fill the finished pasties with it.
