Strawberry and rhubarb soup

Try an unusual refreshing spring cold rhubarb soup with strawberries.

Ingredients:

  • 300 g rhubarb,
  • 200 g strawberries,
  • 1 sprig of mint,
  • 4 tablespoons sugar,
  • 70 g of ice cream,
  • 1 liter of water.

Preparation

  1. Put the water on the fire and bring it to a boil.
  2. Pour in the sugar and cook until dissolved.
  3. Peel the rhubarb and cut it into pieces of about 2 cm and throw it into the syrup along with the mint.
  4. Cook the rhubarb on low heat for 2 minutes and remove from the heat.
  5. Pour the cooled soup on plates, add strawberries and ice cream.

Rhubarb salad with tomatoes and herbs

Rhubarb dishes

The freshest and most vitamin-rich spring salad of rhubarb and herbs will appeal to everyone who wants to lose weight.

Ingredients:

  • 300 g rhubarb,
  • 2 tomatoes,
  • 1 onion,
  • half a lemon,
  • 1 bunch of green lettuce,
  • 1 bunch of dill,
  • 1 tablespoon sesame seeds,
  • 1 tablespoon olive oil,
  • sugar to taste,
  • salt to taste.

Preparation

  1. Cut the onion into rings, sprinkle with sugar and sprinkle with lemon juice.
  2. Peel the rhubarb and cut it into cubes.
  3. Cut the tomato into small slices.
  4. Chop the greens.
  5. Mix all the ingredients, add the crushed sesame seeds, salt and season with olive oil.

Short grated rhubarb pie

Rhubarb dishes

Tender rhubarb stalks are a great filling for a homemade pie. We offer to cook it with a shortbread dough.

Ingredients:

for the test:

  • 200 g butter,
  • 1 egg,
  • 300 g flour,
  • 4 tablespoons sugar,
  • 10 g vanilla sugar,
  • 1 teaspoon baking powder,
  • pinch of salt,

for the filling:

  • 500 g rhubarb,
  • 200 g sour cream,
  • 2 tablespoons sugar,
  • a pinch of ground cinnamon.

Preparation:

  1. Mix the sifted flour with salt, sugar and baking powder.
  2. Grate the cold butter into the flour and grind everything into fine crumbs.
  3. Beat in the egg and knead the dough.
  4. Wrap the third part of the dough in plastic wrap and put it in the refrigerator.
  5. Roll out the remaining dough, form the base for the pie from it and bend the sides.
  6. Peel the rhubarb and cut it into pieces half a centimeter long.
  7. Mix sour cream with sugar and cinnamon.
  8. Put the rhubarb on the dough base and pour it with sour cream.
  9. Take out the cooled dough and quickly grate it on a coarse grater on top of the pie.
  10. Send the grated rhubarb pie to the preheated 180°C oven for 30-40 minutes.
  11. Cool the finished pie, take it out of the mold and serve.
