Two unusual recipes for okroshka: on kefir and on kvass with herring

Okroshka on kvass with herring
Ingredients
- Kvass — 1 l
- Herring — 200 g
- Potatoes — 4 pcs.
- Eggs — 4 pcs.
- Cucumbers — 2 pcs.
- Green onion — 50 g
- Dill — 30 g
- Sour cream — to taste.
Cooking method
- Boil hard-boiled eggs and potatoes in uniforms. Cool, peel and cut into small cubes.
- Cut the herring carcass — cut off the tail and head, remove the spine and small bones, remove the thin skin from above. The resulting fillet is cut into small cubes of the same size.
- Finely chop the dill and herbs. Cut the cucumbers into small cubes.
- Mix all the ingredients, pour the cooled kvass.
- Before serving, season with sour cream to taste.
Okroshka on kefir with chicken
Ingredients
- Kefir — 1 l
- Chicken — 200 g
- Potatoes — 4 pcs.
- Cucumber — 2 pcs.
- Eggs — 4 pcs.
- Green onion — 50 g
- Fresh basil and rosemary-1 sprig each
- Mustard — 1 tsp
- Salt — to taste
Cooking method
- Boil the chicken, hard-boiled eggs, and potatoes in their uniforms. Cool, peel and chop into small cubes.
- Also chop the cucumbers into cubes, finely chop the green onions and basil with rosemary.
- Mix all the ingredients in a deep bowl, season with mustard, salt and pour the cooled kefir.
