- Eggs – 8 pcs.
- Milk – 1 cup
- Spinach – 150 g
- Butter for greasing the mold – 10 g
- Salt, pepper, spices – to taste.

Cooking method
- Cut the onion into cubes, finely chop the spinach and mint leaves. Rub the cheese on a medium grater.
- Break the eggs into a bowl, add salt and pepper, add sour cream, spinach, mint and mix thoroughly with a fork.
- Fry the onion in a pan with butter until transparent.
- Pour the egg mixture into the pan and sprinkle the grated cheese on top.
- Cover and cook for 3-5 minutes over low heat.

- Heat the olive oil in a frying pan and simmer the cherry tomatoes for 2 minutes. Remove the tomatoes from the pan and set aside.
- Pour the green onions into the pan and fry, stirring, until soft.
- Add a little spinach leaves, lightly grind and send to the pan. Simmer, stirring, until the leaves are reduced in volume.
- Remove the spinach and onion from the heat, cool slightly and add the grated Parmesan cheese.
- In a bowl, whisk the eggs, salt and pepper. Add sour cream and milk and mix thoroughly.
- Preheat the oven to 180 degrees.
