When to make jam and how to properly collect rose petals?
To make jam from rose petals, you need a special "tea" rose bush, with small petals on the flowers of a delicate pink color.
This rose blooms most actively in June-July. The flowers are picked by hand in the morning. For one portion of jam, the petals can be harvested for several days, saving the already plucked flowers in the refrigerator in a tied bag, so that the aroma does not evaporate.
Rose tea jam-recipe
Ingredients in proportion:
- 100g rose petals,
- 1 l of water,
- 1 kg of sugar,
- a pinch of citric acid.
Rose jam-recipe for cooking:
- Separate the petals from the rose flowers and from the pollen. It is better to do this on a flat surface, for example, on a table.
- Shake the resulting pile of petals and carefully transfer small handfuls to the basin, and on the table will remain fine litter and pollen.
- In small portions in a colander, wash the petals with water, and then scald them with boiling water.
- Pour a couple of tablespoons of sugar on the bottom of the container (pan or jar). Also pour sugar and a pinch of citric acid over all portions of the petals. Citric acid preserves the beautiful color of the jam.
- Spoon well on top, pour a little more sugar, cover the container with a lid and put it in the refrigerator for 10-12 hours. The next day, the juice should appear in the petals.
- Cook sugar syrup in the proportion of 1 kg of sugar per 1 liter of water. Transfer the rose to a jam-making container and pour the boiling syrup over it.
- Decide on the amount of syrup so that the mass is not too thick or too liquid. Jam from rose petals is practically not boiled, so the consistency will remain the same.
- Put the jam on the fire and boil for 5 minutes. In the process of cooking, remove the foam. Then turn it off and leave it on for 6-12 hours.
- Repeat the cooking process three times.
- At the end of cooking, the petals should slightly crunch. If you want them to become a little softer, cook them longer or repeat the cooking process a fourth time. But remember, the longer the jam is made from rose petals, the less vitamins are left in it.
