Alton Brown's brined turkey swaps the fridge for a cooler — no basting required

Every Thanksgiving, the same problem: a raw turkey the size of a small dog and a fridge already packed with pie. Alton Brown's answer is to stop fighting the refrigerator altogether. His classic brined and roasted turkey uses a 5-gallon insulated cooler as the brine vessel, freeing up precious shelf space while the bird soaks up salt, sugar and vegetable broth for 8 to 12 hours.

The brine itself is deliberately uncomplicated — 3 cups of Diamond Crystal kosher salt (or 1¾ cups of Morton, which is denser), ⅔ cup sugar, 4 quarts of low-sodium vegetable broth and 8 pounds of ice. Stir the salt and sugar into hot water first so they actually dissolve, then add the broth and ice and drop the turkey in, breast side up. If the bird floats, a gallon bag of ice water laid on top keeps it submerged.

The roast is where it gets easy

Once the turkey has soaked, pat it dry and it goes into a blazing 500°F oven for 30 to 40 minutes — enough heat to turn the skin crisp and golden. Then you shield the breast with a piece of oiled foil, drop the temperature to 350°F, and walk away. Brown's whole point is that there is no basting, no hovering, no basting brush anywhere near this recipe.

A few rules keep the method safe and the results clean. The brine has to stay at or below 40°F the entire soak, so a probe thermometer and sealed ice packs are the cooler's best friends. And check your packaging first: many supermarket birds are sold prebrined or injected with a salt solution — labeled “self-basting” or “enhanced” — and brining one of those a second time will make it punishingly salty. Pick an unbrined turkey, and let Brown's own advice finish the job: stir the pan drippings with care, because a brined bird means salty gravy, so taste before you season.

The recipe is built for a 14-to-18-pound turkey, yields 12 servings, and runs about 26 hours from frozen bird to carved centerpiece. Most of that is hands-off time — which is exactly the point.
