Soup with lentils and sorrel

Sorrel and lentil soup

Ingredients:

  • Sorrel-bunch
  • Green lentils-3/4 cup
  • Carrot - 1 pc.
  • Onion - 1 pc.
  • Potatoes-3-4 pieces.
  • Salt, pepper - to taste
  • Bay leaf - 2-3 leaves
  • Dill, parsley-a couple of sprigs
  • Butter - 50 g
  • Vegetable oil - 1 tbsp.

Cooking method

  1. Wash the lentils well, fill them with water and put them on the fire. Cook for 20-25 minutes.
  2. While the lentils are cooking, peel and cover the potatoes and add them to the lentil soup.
  3. Chop the onion finely and grate the carrots. In a frying pan, heat the vegetable oil and butter and fry the carrots and onions.
  4. Wash and slice the sorrel well. Cover the greens.
  5. When the lentils and potatoes are cooked, add the fried onions with carrots, sorrel. Cook for another 5 minutes.
  6. Add salt, pepper, bay leaf, herbs and turn off the heat. 
  7. Cover the pan with a lid and let it brew for 10-15 minutes.

Sorrel and cabbage soup

Sorrel, cabbage and meat soup

Ingredients:

  • Meat (pork, beef) - 500 g
  • Sorrel-puchek
  • Young cabbage - 300 g
  • Potatoes-3-4 pieces.
  • Carrot - 1 pc.
  • Onion - 1 pc.
  • Tomato paste - 1 tbsp.
  • Dill and parsley-a couple of sprigs
  • Bay leaf - 1-2 pcs.
  • Allspice - 1/2 tsp.
  • Salt - to taste.

Cooking method

  1. Prepare a broth of meat. 
  2. Cover the potatoes and onions, chop the cabbage, rub the carrots on a large grater. Wash the sorrel and herbs well and cover them.
  3. Add potatoes to the boiling meat broth.
  4. Fry the onion and carrot in a pan for 2-3 minutes. Add tomato paste and a little broth to the roast and simmer for a few minutes.
  5. When the potatoes are cooked in the soup, add the cabbage, sorrel, and roast. Cook for 5 minutes.
  6. Add the herbs, allspice and bay leaf. Turn off the fire. Cover with a lid and let stand for 5-10 minutes.
  7. You can serve the soup with sour cream.

Sorrel soup with rice

Sorrel, rice and chicken soup

Ingredients:

  • Chicken - 500 g 
  • Sorrel - 1 bunch
  • Rice - 2-3 tbsp.
  • Potatoes-2-3 pieces.
  • Carrot - 1 pc.
  • Onion - 1 pc.
  • Dill, parsley - a few sprigs,
  • Salt - to taste
  • Vegetable oil - for frying

Cooking method

  1. Fill the chicken with water, salt and put it on the fire. When the broth boils, add the rice.
  2. Cover the potatoes and add them to the broth after 20 minutes.
  3. Cover the onion and grate the carrots on a large grater and fry in vegetable oil in a frying pan.
  4. Wash sorrel and tires.
  5. When the broth is cooked with rice and potatoes, add the fried onions with carrots and sorrel. Let it boil, boil for 5 minutes. Turn off the heat, add the herbs and let it brew under a closed lid for 5-10 minutes.
  6. Before serving, fill the soup with sour cream.
